200g salmon fillet

1 tablespoon tandoori paste

1 tablespoon mayonnaise

Juice of 1 lemon

100g mangetout peas

4 spring onions, trimmed and chopped

50ml vinaigrette (see page 209)

1 tablespoon finely chopped fresh mint leaves

TANDOORI SALMON AND MANGETOUT SALAD

1 Run your fingers over the salmon fillet and remove any stray bones. Cut into chunky cubes.

2 Mix together the tandoori paste, mayonnaise and lemon juice. Add the salmon cubes and turn in the mixture to coat.

3 Steam the mangetout for 2 minutes or until barely tender, then place in a sieve and refresh under cold running water. Drain thoroughly. Stack 2 or 3 mangetout at a time, slice into four lengthways, and pile the slices into a dish with the spring onions.

4 Thread the salmon on to skewers and cook under a hot grill for about 10 minutes, turning once or twice.

5 Mix together the vinaigrette and the finely chopped fresh mint leaves and stir through the vegetables.

6 Serve the vegetables with the salmon on top.
